Swiss Chard Casserole - cooking recipe

2 bunches chard or spinach
1 tsp. salt
2 Tbsp. melted butter or margarine
2 or 3 eggs, slightly beaten
3 to 4 Tbsp. grated Parmesan cheese
1 c. low-fat cottage cheese
1/8 tsp. pepper
2 minced green onions
1/2 c. grated Swiss or Monterey Jack cheese
Preparation

Trim ribs from chard (or stems from spinach); wash well and cook in a large pan with 1 teaspoon salt and 2 tablespoons water (no water for spinach) until leaves have greatly reduced in bulk and are tender, 5 to 7 minutes for chard, less for spinach.
Drain well in a colander, pressing out water and chop greens finely.
In large bowl, mix greens with eggs, butter, green onion, cheese and cottage cheese.
Add salt and pepper.
Bake 30 to 45 minutes until set.
Serves 6 to 8.
May be made ahead and refrigerated, but allow a little extra cooking time.
