Parsleyed New Potatoes - cooking recipe

Ingredients
    3 lb. new potatoes (small)
    boiling water
    salt
    1/2 c. butter or margarine, melted
    2 Tbsp. lemon juice
    2 Tbsp. chopped parsley
Preparation
    Scrub potatoes; pare a strip of skin about 1/2-inch wide around center of each potato.
    Place in medium saucepan.
    Add boiling water to measure 2 inches and 1/2 teaspoon salt.
    Bring to boiling; boil gently covered, 20 minutes or just until potatoes are tender.
    Drain; return to heat several minutes to dry out. Add butter, lemon juice, 1/2 teaspoon salt and the parsley; toss gently to coat well.
    Makes 8 servings.
