Cajun Roast - cooking recipe

Ingredients
    1 rump roast or similar lean cut
    1 whole yellow onion
    1 doz. cloves garlic or more
    Tabasco sauce
    salt and pepper
Preparation
    Preparation:
    Tenderize the roast, using a fork (poking the heck out of it on both sides!).
    Generously apply Tabasco sauce, ground black pepper and salt.
    Preheat oven to 300\u00b0.
    Place roast in roaster and smother with minced garlic and chopped onion. (Should cover meat completely.)
    Cover tightly with foil and cook an hour per every pound of meat.
    Serve in its own au jus gravy over your favorite rice.
