Cream Of Chicken With Cheese Soup - cooking recipe

Ingredients
    4 Tbsp. butter
    3/4 c. onion, chopped
    1/2 c. carrots, sliced
    1/2 c. celery, sliced
    1 qt. chicken stock
    1 c. heavy cream
    1 lb. processed American cheese, grated (Velveeta)
    3 c. cooked chicken, chopped
    seasoned salt and white pepper to taste
    parsley, chopped
Preparation
    Saute vegetables in butter for about 10 minutes.
    Add chicken stock and simmer until vegetables are tender (about 15 minutes). Add cream and heat to simmering.
    Add cheese and chicken, stirring to melt cheese.
    Season to taste.
    Heat through and serve, garnished with parsley.
    Makes 2 quarts.
