Cream Of Mushroom Soup(Zupa Grzybowa) - cooking recipe

Ingredients
    1 lb. butter or margarine
    2 lb. mushrooms, chopped fine
    6 qt. chicken stock (hot)
    1 qt. cream
    1 lb. onions, chopped fine
    1 lb. flour
    2 qt. milk (hot)
    salt and pepper to taste
Preparation
    Saute onions and mushrooms together in butter until soft, but do not brown.
    Add flour and stir until smooth.
    Cook about 5 minutes.
    Add chicken stock gradually, stirring until smooth. Simmer 7 to 8 minutes until thickened and smooth.
    Whip as necessary.
    Add hot milk and cream and season to taste.
    Serve with garnish of chopped parsley.
    Makes 3 gallons.
