Warm Potato Salad - cooking recipe

Ingredients
    2 c. cubed red potatoes
    2 Tbsp. finely chopped purple onion
    1 Tbsp. plus 1 tsp. white wine vinegar
    1 Tbsp. dried chives
    1 tsp. olive oil
    1/4 tsp. sugar
    1/4 tsp. salt
    1/4 tsp. pepper
Preparation
    Place potatoes in a saucepan; add water and cover.
    Bring to a boil.
    Reduce heat and simmer 10 minutes or until potato is tender; drain.
    Place potato and onion in a bowl.
    Combine vinegar and remaining ingredients; stir well.
    Add to potato mixture; toss gently to coat.
    Yield:
    4 servings.
