Chicken Piccata - cooking recipe
Ingredients

4 chicken cutlets (about 5 oz. each) *
2 Tbsp. all-purpose flour
1 to 2 Tbsp. vegetable oil
1/4 c. chicken broth or white wine
2 Tbsp. butter or margarine
1 Tbsp. lemon juice
1 Tbsp. chopped parsley
Preparation

Coat cutlets with flour, shaking to remove excess.
In large skillet, heat oil over medium-high heat.
Cook chicken cutlets, 2 at a time, if necessary, until browned on both sides.
Remove from skillet to plate.
Add chicken broth, butter and lemon juice to skillet.
Cook, stirring, until mixture boils.
Return cutlets to skillet.
Cover and cook about 2 minutes, basting once with pan juices, until cooked through.
Before serving, sprinkle with parsley.
Serves 4.
