Okra Fritters - cooking recipe
Ingredients

1/4 c. cornmeal
1/4 c. all-purpose flour
1/2 c. finely chopped onion (shallots are good)
1/2 c. evaporated milk
1 large egg, beaten
3 Tbsp. chopped fresh parsley
2 Tbsp. grated Parmesan cheese
1/2 tsp. salt
1/4 tsp. black or red pepper
2 c. sliced fresh okra
Preparation

Mix all ingredients, except the okra.
Stir in okra last.
In a deep, black skillet pour enough oil to make about 2 inches. Drop mixture by tablespoonfuls into hot oil and cook until golden brown.
Serve immediately.
Makes a bunch!
