Yeast Doughnuts - cooking recipe

Ingredients
    1 1/2 c. milk, scalded
    2/3 c. sugar
    2 tsp. salt
    2 pkg. yeast
    1/2 c. warm water
    8 c. sifted flour
    2 Tbsp. vanilla
    2/3 c. soft shortening
    4 eggs, well beaten
Preparation
    Combine milk, sugar and salt.
    Cool to lukewarm.
    Dissolve yeast in warm water.
    Sift flour, add 4 cups to milk and sugar mixture; beat well.
    Beat in the yeast, then shortening and eggs. Add remaining flour to make a soft dough.
    Knead on floured surface.
    Place in greased bowl, turn dough over.
    Let rise until double.
    Roll out dough 1/2-inch thick, cut out with biscuit cutter and work between hand until round.
    Cut center out with small bottle mouth.
    Cover and let rise until light, about 40 minutes.
    Deep fry in vegetable shortening at 375\u00b0, until light brown; turn once.
    Drain on absorbent paper.
    Makes about 4 dozen doughnuts.
