Squash Casserole(Freezes Well!) - cooking recipe

Ingredients
    2 to 3 c. cooked squash
    1 chopped onion
    1 egg, slightly beaten
    1/2 stick margarine, sliced
    1/2 c. mayonnaise
    1 Tbsp. sugar
    1 c. grated Cheddar cheese (sharp), divided
    1 to 1 1/2 c. cracker crumbs, divided
    dash of cayenne pepper
    salt and pepper to taste
    dash or 2 oregano
Preparation
    Cook squash with a chopped onion.
    Put well drained hot squash in large mixing bowl.
    Add egg, margarine, mayonnaise, sugar, half
    of the cheese, and half of the crackers.
    Season with cayenne pepper, salt, pepper and oregano; mix well.
    Put into
    a buttered
    1
    1/2
    quart
    casserole
    dish and top with remaining cheese
    and crackers.
    Bake at 350\u00b0 for 20 minutes. Crookneck squash or a mixture of crookneck and zucchini may be used.
    Dot with butter or margarine.
    Makes 6 to 8 servings.
