Meat And Cheese Roll - cooking recipe

Ingredients
    3 lb. lean ground beef
    2 eggs, beaten
    1 1/2 c. Italian style bread crumbs
    1 c. finely chopped onion
    30 oz. tomato sauce
    2 tsp. salt
    1 tsp. pepper
    1 Tbsp. parsley
    4 c. Mozzarella cheese
    1 green pepper, boiled and cut into rings
Preparation
    Combine beef, eggs, bread crumbs, onions, 2/3 cup tomato sauce, salt, pepper and parsley.
    Mix well and shape into flat rectangle on a piece of wax paper.
    Sprinkle 3 1/2 cups of cheese over meat mixture.
    Starting with short edge, roll up like a jelly roll and press ends of roll to seal.
    Bake in shallow pan at 350\u00b0 for 1 hour.
    Drain excess fat.
    Pour remaining sauce over roll. Garnish with 1/2 cup cheese and green pepper rings.
    Bake an additional 5 minutes.
