Cherry Pecan Loaf - cooking recipe

Ingredients
    2 1/4 cups all purpose flour
    1 tsp. baking soda
    1/2 tsp. salt
    1/4 cup margarine, softened
    1/4 cup sugar
    1/2 cup egg substitute
    6 packets Equal sweetener
    1/2 cup unsweetened applesauce
    1 tsp. vanilla extract
    1/4 tsp. almond extract
    1 (8 oz.) can Vanilla Glucerna Shake
    3 ounces dried red tart pitted cherries
    1/2 cup chopped pecans
Preparation
    Preheat oven to 350 degrees.
    Spray 9 x 5 inch bread pan with vegetable oil and flour sides.
    In medium bowl, combine flour, baking soda and salt.
    Set aside.
    In large bowl, cream margarine and sugar together
    Add egg substitute and continue to mix for an additional minute.
    Add Equal, applesauce, vanilla and almond extract.
    Alternately add flour mixture and Glucerna Shake until ingredients are just moistened. Stir in cherries and nuts.
    Pour batter into prepared pan.
    Bake for 50 to 60 minutes or until inserted toothpick comes out clean. Cool completely before slicing.
