Poor Man'S Caviar(Eggplant) - cooking recipe

Ingredients
    1 large eggplant
    1 c. finely chopped onions
    2 to 3 Tbsp. lemon juice
    1 tsp. finely chopped garlic
    2 large tomatoes, peeled, seeded and finely chopped
    1/2 tsp. sugar
    freshly ground pepper
    6 Tbsp. olive oil
    1/2 c. finely chopped green pepper
    2 tsp. salt
Preparation
    Preheat oven to 425\u00b0.
    Bake eggplant about 1 hour until soft. Cook onions in 4 tablespoons oil until soft.
    Stir in green pepper and garlic and cook 5 minutes.
    Put in bowl with eggplant pulp, which has been chopped finely, along with tomatoes, sugar, salt and pepper.
    Heat remaining oil in skillet and cook mixture about 1 hour on low.
    Add lemon juice. Serve with rye, pumpernickel bread or sesame seed crackers.
    Serves about 20 (more or less).
