Cashew Yam Casserole - cooking recipe
Ingredients

2 1/2 lb. yams
1 tsp. cinnamon
1/4 tsp. salt
1 egg, beaten
1/4 c. fresh orange juice or pineapple juice
2 Tbsp. brown sugar
3 Tbsp. melted butter or margarine
Preparation

Beat until fluffy, adding more juice if mixture is dry.
Add cashews to 1 tablespoon melted butter.
Heat in a small frying pan until toasted.
Sprinkle on top of casserole and bake at 375\u00b0 for 20 minutes or 35 minutes if refrigerated.
Makes 6 servings.
