Cauliflower Soup (Weight Watchers) - cooking recipe

Ingredients
    2 Tbsp. diet margarine
    3 c. cauliflower, chopped
    1/4 c. flour
    6 oz. light Cheddar, grated
    1/2 c. onion, chopped
    1 can chicken broth
    2 1/2 c. 1% or skim milk
    salt and pepper
Preparation
    Melt margarine.
    Saute onion.
    Add cauliflower and broth; bring to a boil.
    Cover; reduce heat and simmer 12 to 15 minutes. Combine milk and flour smoothly.
    Add to saucepan.
    Stir over medium heat until thickened and boils.
    Remove from heat.
    Add cheese, stirring, until melted.
    Add salt and pepper.
