Fat-Free Devil'S Food Cake - cooking recipe

5 egg whites
1 1/4 c. firmly packed brown sugar
3/4 c. buttermilk
2 c. all-purpose flour
1/3 c. unsweetened cocoa or unsweetened European-style cocoa powder
3/4 tsp. baking powder
3/4 tsp. baking soda
1 Tbsp. grated orange peel (optional)
1 tsp. vanilla extract
confectioners sugar (for garnish)
Preparation

Preheat oven to 350\u00b0.
Coat 9-inch square baking pan with nonstick cooking spray; set aside.
In large bowl with mixer at medium, beat egg whites, light brown sugar and buttermilk 2 minutes until blended.
Add flour, cocoa powder, baking powder, baking soda, grated peel and vanilla extract.
Beat 1 to 2 minutes until well blended.
Pour into prepared pan; bake 25 to 30 minutes until pick inserted comes out clean.
Cool 15 minutes in pan on wire rack.
Remove cake from pan to wire rack and cool completely, about 30 minutes.
Garnish.
Serve with whipped cream, if desired.
