Doris Kramer'S Potato Pancakes - cooking recipe

Ingredients
    6 medium size potatoes
    3 well beaten eggs
    1/2 tsp. salt
    1 small finely grated onion
    pinch of pepper
Preparation
    Grate the potatoes, leaving in all liquid. Add the eggs, salt, onion and pepper.
    Drop by spoonful into 1/8-inch hot oil.
    Fry quickly on each side.
    Drain on heavy paper.
    Should be very crisp. Serve at once. Good with applesauce or sour cream.
