Linguine With Chicken Livers(This Is Easy, Unusual, Inexpensive And Delicious.) - cooking recipe

Ingredients
    1 to 1 1/2 c. chopped white onion
    2 slices bacon, diced
    2 Tbsp. olive oil
    1 tsp. salt
    milled black pepper
    1 (48 oz.) can tomatoes (whole or crushed)
    1/3 tsp. crushed red pepper flakes
    1/2 to 1 lb. chicken livers, halved or quartered (I use 1 lb.)
    1 Tbsp. butter
Preparation
    Saute onions and bacon in oil until soft.
    Add salt, pepper and tomatoes, breaking up whole tomatoes with a wooden spoon as they simmer for 20 minutes.
    Stir in the red pepper.
    Continue cooking until sauce is thickened and has body and flavor (perhaps 1/2 hour, this is not a 3 hour number).
