Eggs Florentine - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen chopped spinach
    2 oz. softened cream cheese
    1/4 tsp. salt
    1/8 tsp. white pepper
    1 c. grated medium Cheddar cheese
    2 large eggs
Preparation
    Preheat oven to 450\u00b0. Thaw spinach and drain well.
    Blend spinach, cream cheese, salt and pepper; press into bottom of 2 small casserole dishes.
    Crack 1 egg on top of each spinach bed. Top each dish with 1/2 cup Cheddar cheese and bake on rack above center of the oven for 10 minutes.
    Garnish lightly with cayenne pepper, if desired.
    Serves 2 people.
