Chicken Salad In Tart Shells - cooking recipe

Ingredients
    1 (5 to 6 lb.) baking hen
    9 stalks celery, cleaned and chopped
    1 Tbsp. salt
    1/2 tsp. pepper
    3 qt. water
    8 hard-cooked eggs, chopped
    1 c. mayonnaise
    1 Tbsp. lemon juice
    1/2 tsp. red pepper
    1/2 tsp. paprika
Preparation
    Cook hen in 3 quarts water with 1
    stalk
    celery,
    salt and pepper.
    After chicken has cooled, bone
    and
    tear
    into small pieces.
    Combine 1/2 cup broth with
    chicken and remaining ingredients.
    Mix well and chill.\tSpoon
    2
    tablespoons chicken salad into each tart shell.
    Makes 8 dozen.
