Italian Chicken Marengo - cooking recipe

Ingredients
    3 tsp. olive oil
    4 boneless chicken breasts
    4 oz. sliced mushrooms
    1 onion, sliced
    1 clove garlic, chopped
    1 (8 oz.) can stewed tomatoes
    2/3 c. chicken broth
    1/2 tsp. thyme
    1/4 tsp. salt
    1/8 tsp. pepper
    1 Tbsp. flour
    1 Tbsp. chopped parsley
Preparation
    Heat 2 teaspoons oil in skillet; brown chicken on both sides. Remove chicken.
    Add remaining oil, mushrooms, onion and garlic; saute until tender.
    Add tomatoes, 1/2 cup broth, thyme, salt and pepper; return chicken to skillet.
    Cover; simmer for 10 to 12 minutes, until chicken is cooked.
    Whisk together the flour and remaining broth.
    Remove chicken; keep warm.
    Stir flour mixture into skillet until mixture thickens and boils.
    Sprinkle with parsley.
    Makes 4 servings.
