Magnificent Minestrone - cooking recipe

Ingredients
    1 c. cooked garbanzo beans
    1 c. cooked adzuki or azuki beans
    1 c. cooked kidney beans
    1 1/2 qt. water or vegetable stock
    1/2 c. barley
    2 stalks celery, chopped
    1 carrot, thinly sliced
    1 (16 oz.) can whole peeled tomatoes, chopped
    1 (12 oz.) can tomato juice
    2 Tbsp. olive oil
    1 onion, chopped
    1/2 c. parsley, chopped
    1/2 c. spinach, chopped
    2 cloves garlic, mashed
    1 tsp. oregano
    1 bay leaf
    4 Tbsp. red wine
    2 Tbsp. Parmesan cheese
    1 Tbsp. tamari soy sauce
    salt to taste
Preparation
    Saute onion, parsley, spinach, garlic and herbs in olive oil until tender.
    Mix all ingredients except the wine, soy sauce and Parmesan cheese. Simmer covered for 1 hour, then stir in wine, soy sauce and Parmesan cheese before serving.
