Meat Loaf With Vegetables - cooking recipe

Ingredients
    3 lb. chopped or ground beef
    1 lb. pork fat, salt pork or fat bacon
    2 large potatoes or 1 c. rice
    2 large sweet onions
    3 carrots
    3 dry biscuits or 4 slices bread
    3/4 can tomato paste or 1 1/2 c. tomato juice
    1 Tbsp. salt
    1/2 tsp. pepper
    butter
    large pinch of powdered oregano
Preparation
    If chopped, the meat should be minced very fine, together with the pork fat or trimmed and blanched salt pork or bacon.
    Grate the potatoes, onions and carrots.
    Crush the dry biscuits or bread fine.
    Reserve 2/3 cup of bread crumbs.
    If you are using tomato paste, mix it with 3/4 cup water.
    Combine all ingredients and seasonings, except the butter and reserved bread crumbs; mix well.
