Mediterranean Fish Stew - cooking recipe
Ingredients

2 medium onions, minced
2 Tbsp. oil
2 cloves garlic, minced
1 (15 oz.) can tomatoes, drained
1 1/2 qt. water
1 qt. clam juice
1 bay leaf
2 Tbsp. dried parsley
1 tsp. basil
1 tsp. salt
pepper to taste
3 c. potatoes, diced
1 lb. whitefish fillets
Preparation

Cook onions and garlic in oil until tender.
Add tomatoes; cook over moderately high heat for 4 to 5 minutes.
Add water, clam juice and seasonings; simmer for 20 minutes.
Add potatoes; cook until done.
Add fish fillets; simmer until fish flakes easily, about 8 to 10 minutes.
Serves 6.
