German Potato Pancakes(Theresa Shea) - cooking recipe

Ingredients
    3 medium potatoes
    1 egg
    1 Tbsp. grated, raw onion
    1 1/2 Tbsp. flour
    1/4 tsp. baking powder
    scant tsp. salt
Preparation
    Peel and grate potatoes.
    Do not include any excess moisture which accumulates.
    Add egg and onion; stir well.
    Add dry ingredients and mix until blended.
    Drop batter by the heaping tablespoonfuls onto hot skillet, containing 1/4-inch shortening or bacon fat.
    Spread with the spoon to form flat, even cakes.
    Fry until crisp and golden brown.
    Serve hot with applesauce.
    Makes about 16.
