Carrot Muffins - cooking recipe
Ingredients

2 c. flour
1 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. carrots, grated
1/2 c. nuts, chopped
1/2 c. raisins
1/2 c. coconut
1 large apple, grated
3 large eggs
1 c. vegetable oil
2 tsp. vanilla
Preparation

Sift together flour, sugar, baking soda, cinnamon and salt. Stir in carrots, raisins, nuts, coconut and apple.
In separate bowl, blend oil, eggs and vanilla.
Mix with flour mixture just until combined.
Spoon batter into greased muffin tins.
Bake at 350\u00b0 for 35 minutes.
Makes 15 muffins.
Unbaked batter may be stored in refrigerator for 1 week.
