Zucchini Custard Pie - cooking recipe
Ingredients

2 c. zucchini
2 eggs
3/4 c. sugar
1 heaping Tbsp. cornstarch
1/2 tsp. salt
1 can evaporated milk
1 Tbsp. vanilla
1/2 c. coconut
Preparation

Cook zucchini. Blend or mash it. Blend all ingredients and pour in unbaked pie crust. Bake for 15 minutes at 400\u00b0, then at 350\u00b0 for 30 to 45 minutes or until knife comes out clean. Makes a 10-inch pie.
