Green Tomato Relish - cooking recipe

Ingredients
    12 1/2 lb. green tomatoes
    3 large onions
    10 green peppers
    3 Tbsp. salt
    1 qt. vinegar
    1/4 tsp. cloves
    3 Tbsp. mustard
    1 Tbsp. cinnamon
    1 Tbsp. allspice
    1/2 c. horseradish
    1 3/4 c. sugar
Preparation
    Wash vegetables; drain and chop.
    Place in large container. Sprinkle with salt.
    Cover with weighted plate.
    Let stand overnight.
    Drain.
    Add vinegar, mustard, spices (which have been tied in cheesecloth bag), sugar and horseradish.
    Simmer about 15 minutes or until vegetables are tender.
    Pack in hot sterilized jars.
    Seal.
