Barbara'S Tabouli - cooking recipe

Ingredients
    1 c. bulghur
    1 1/2 c. boiling water (enough to cover bulghur)
    1 to 1 1/2 tsp. salt
    1/4 c. fresh lemon juice
    1 tsp. garlic, crushed
    1/4 c. olive oil
    1 c. chopped fresh parsley
    pepper to taste
    1/4 c. green pepper, diced
    1/4 c. carrots, diced
    1/4 c. cucumber, diced
    1 c. tomatoes, diced
    1/4 c. black olives, pitted and diced
Preparation
    Cover bulghur with boiling water.
    Add salt and let stand 30 minutes; drain any excess water.
    Stir in lemon juice, garlic and oil.
    Add parsley and pepper.
    Toss in vegetables and olives. Serve at room temperature.
    Serves 6.
