Cindy'S Broccoli Casserole - cooking recipe

Ingredients
    2 heads broccoli or 2 pkg. frozen, thawed and drained
    1 can cream of mushroom soup
    1 can cream of celery soup
    6 slices bacon
    1 small onion
    1 can French fried onions
    6 buttery crackers
    1/2 c. shredded cheese (Velveeta Mexican or regular Velveeta or Cheddar)
    1 small can water chestnuts, chopped (optional; add more to taste)
Preparation
    Cut and steam broccoli for 5 minutes.
    Uncover and let cool until cool enough to handle.
    Cut up into small pieces.
    Set aside in a large mixing bowl.
    Broccoli should be crisp, but tender.
