Meatballs And Rice In Consomme - cooking recipe

Ingredients
    1 lb. ground chuck
    1 tsp. salt
    1/8 tsp. pepper
    1/4 c. chopped green pepper
    2 Tbsp. chopped celery and leaves
    1 small onion, chopped
    2/3 c. rice
    1 can consomme
    1 can water
Preparation
    Mix ground beef, salt and pepper; shape into 12 balls.
    Brown slowly on all sides in skillet, using a small amount of fat, if necessary.
    Add green pepper, celery and onion.
    Cook for 5 minutes longer.
    Add rice, consomme and water.
    Bring to a boil. Cover and simmer gently, stirring occasionally, for 20 minutes or until rice is tender and liquid is absorbed.
