Lemon Meringue Pie * - cooking recipe
Ingredients

1 1/4 c. sugar
1/4 c. cornstarch
1/8 tsp. salt
1 1/2 c. boiling water
2 egg yolks
2 Tbsp. butter or margarine
1/4 c. lemon juice
grated rind of 1 lemon
Preparation

Combine sugar, cornstarch and salt; add boiling water.
Cook until thick and clear, stirring constantly.
Add slowly a small part of hot mixture to beaten egg yolks.
Pour all together and cook about 5 minutes, stirring, or in double boiler.
Remove from heat and stir in butter, lemon juice and now, grated rind.
Pour into cooled pie shell.
Cover with meringue and bake in a moderate oven at 300\u00b0 for 15 to 20 minutes, or until as brown as you like.
