Country Potato Soup - cooking recipe

Ingredients
    6 small onions, sliced thin
    1 c. celery, sliced thin
    5 Tbsp. butter
    4 c. milk
    2 1/2 c. potatoes, peeled and diced
    1 1/2 Tbsp. flour
    salt and pepper
    minced parsley
Preparation
    Saute onions and celery in 3 tablespoons butter until golden brown.
    Add milk and cook over boiling water for 45 minutes, stirring occasionally.
    Cook potatoes in boiling salt water for 10 minutes; drain.
    Heat remaining 2 tablespoons butter and blend in flour.
    Gradually stir in first mixture and potatoes.
    Cook until thickened.
    Season to taste.
    Sprinkle with parsley.
    Makes about 1 1/2 quarts.
