Mexican Stuffed Peppers - cooking recipe

Ingredients
    1 onion
    8 peppers
    1 1/2 lb. lean ground beef or ground turkey
    1 c. corn
    4 medium potatoes
    8 oz. jar salsa
    salt (optional)
    pepper
Preparation
    Preheat oven to 350\u00b0.
    Wash, top and clean out peppers; set aside.
    Dice onion and potatoes.
    In a mixing bowl, combine meat, potatoes, corn, onion, salt and pepper.
    Add 3/4 jar of salsa and mix.
    Fill peppers.
    Place in baking dish and pour remaining salsa on top.
    Bake until peppers are soft (approximately 45 minutes).
