Zucchini Hot Cakes - cooking recipe

Ingredients
    1 medium zucchini, peeled, shredded and towel dried
    1/2 onion, chopped
    1/2 green pepper, chopped
    1 small box Jiffy corn muffin mix
    1 egg
Preparation
    Mix altogether and drop from tablespoon in frying pan with small amount of hot oil.
    Fry until golden brown on both sides. Powdered sugar may be sprinkled on top.
