Rice And Lentils(Rich In Vitamins) - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 medium onion, finely chopped
    6 to 8 c. water or broth for soup
    1 c. dry lentils
    1 carrot, finely chopped
    1 Tbsp. parsley
    1 stalk celery, chopped
    1 tsp. salt
    1/8 tsp. pepper
    2 c. cooked rice
Preparation
    Heat oil.
    Saute onions.
    Add water and vegies; salt and pepper.
    Simmer over low fire until soft (30 to 50 minutes). Preparing in advance enhances flavor.
    Serves 4.
