Swedish Creamed Potatoes - cooking recipe

Ingredients
    1/4 c. margarine or butter
    6 medium potatoes (about 2 lb.), cubed
    1 medium onion, chopped
    1 to 1 1/4 c. half and half
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Heat margarine in 12-inch skillet until melted.
    Cook potatoes and onion, uncovered, in margarine over medium heat, turning frequently, until potatoes are light brown, 10 to 15 minutes.
    Add 1 cup half and half.
    Sprinkle with salt and pepper.
    Cover and simmer over low heat, stirring occasionally, until potatoes are tender, about 10 minutes.
    (Add 1 to 4 tablespoons half and half if necessary.)
    Makes 4 to 6 servings.
