Watermelon Rind Pickles - cooking recipe

Ingredients
    rind from 1 large melon (about 7 lb.)
    1 c. lime juice
    2 gal. water
    3 3/4 lb. sugar
    1 qt. vinegar
    cloves
    1 pkg. cinnamon sticks
Preparation
    Select melon with deep rind.
    Remove all green rind and pink meat.
    Cut remaining rind into 1-inch squares.
    Soak this overnight or at least 8 hours in lime water.
    Drain fruit and place in preserving kettle.
    Cover with water and boil until easily pierced with a broom straw.
    This usually takes 2 hours. Drain and cool fruit and stick each pieces with a clove.
    Dissolve sugar and vinegar and add cinnamon.
    Boil 5 to 10 minutes.
    Add fruit.
    Cook until rind is spotted, about 2 to 2 1/2 hours.
