Lemon Meringue Pie - cooking recipe

Ingredients
    1 1/2 c. sugar
    1/4 c. cornstarch
    1/4 tsp. salt
    1 1/2 tsp. lemon rind
    2 c. hot water
    3 eggs, separated
    1/3 c. lemon juice
    2 Tbsp. butter
    1 baked pastry shell
    6 Tbsp. sugar
Preparation
    Combine 1 1/2 cups sugar, cornstarch, salt and lemon rind.
    Add hot water gradually, blending well.
    Cook in saucepan over low heat, stirring constantly until smooth and thickened.
    Beat egg yolks with lemon juice.
    Stir small amount of hot mixture into egg yolks.
    Return to saucepan gradually, stirring constantly.
    Add butter and cook for 2 minutes longer.
    Cool.
    Pour filling into pie shell.
