Diabetic Sponge Cake - cooking recipe

Ingredients
    3 eggs, separated
    1/4 c. water
    sweetener to equal 3/4 c. sugar
    1/4 tsp. vanilla
    1 Tbsp. lemon juice
    3/4 c. flour
    1/4 tsp. cream of tartar
    dash of salt
Preparation
    Beat egg yolks; add water, sweetener, vanilla and lemon juice. Beat until thick and fluffy, about 8 minutes.
    Add flour and salt gradually, mixing well.
    In separate bowl, beat egg whites until foamy.
    Add cream of tartar; beat until stiff.
    Fold batter into egg whites until blended.
    Bake in ungreased loaf pan about 1 hour at 325\u00b0, until done.
