Cherry Parfait Pie - cooking recipe
Ingredients

1 (3 oz.) pkg. cream cheese, room temperature
1/4 c. sugar
1/2 tsp. grated lemon rind
1 tsp. lemon juice
1 tsp. vanilla
2 Tbsp. water
1 tsp. unflavored gelatin
3/4 c. sour cream
1 c. Cool Whip
1 can Comstock cherry pie filling
1 graham cracker crust
Preparation

Beat first five ingredients in small mixer bowl at high speed until
smooth.
Combine
water and gelatin, let stand 1 minute. Place
over
simmering water until gelatin dissolves. Beat gelatin mixture
into
cream cheese mixture until smooth. Blend in sour cream.
Fold in whipped topping.
Spoon 1 cup of the cherry pie filling
into
the graham cracker crust and top with the cream cheese mixture.
Refrigerate until set (approximately 4 hours). Top
with
the remaining cherry pie filling and garnish with additional whipped topping.
