Skillet Corn And Tomatoes - cooking recipe

Ingredients
    2 large ripe tomatoes, chopped
    3 c. fresh or frozen corn kernels
    2 Tbsp. butter
    2 Tbsp. oil
    1 tsp. pepper
    salt to taste
    1 Tbsp. fresh basil
    1 tsp. nutmeg
    1/2 c. grated Parmesan cheese
Preparation
    Place tomatoes and corn (including juices) in a large heavy skillet.
    Add butter and oil and cook over medium heat until tender, stirring occasionally.
    Season with pepper, salt, basil and nutmeg.
    Stir in cheese and cook until melted.
    Yields 6.
