The Ultimate Sweet Potato Casserole - cooking recipe

Ingredients
    8 fresh sweet potatoes
    1 stick real butter
    1/4 c. orange juice
    1 tsp. fresh orange zest
    1 can Coco Lopez cream of coconut (used for pina coladas)
    1/2 c. brown sugar
    salt and pepper
    1 recipe coconut streusel topping
    1 stick butter
    1/2 c. flour
    1/2 c. brown sugar
    1/2 c. coconut
    1/2 c. chopped pecans
Preparation
    Scrub potatoes; dry, butter and wrap in aluminum foil.
    Bake in the oven at 350\u00b0 for 1 hour.
    Let cool; unwrap.
    Peel and place potatoes in mixing bowl.
    Mix with softened stick of butter, orange juice, half the can of Coco Lopez, brown sugar, zest and salt and pepper.
    Place in a 2-quart buttered casserole dish.
