Mint Ice Cream Sandwiches - cooking recipe

Ingredients
    1 pt. mint chip ice cream
    16 (2 1/2-inch) chocolate wafers
    1/4 c. semi-sweet chocolate chips, melted
Preparation
    Scoop 1/4 cup ice cream onto each of 8 cookie wafers.
    Top with remaining 8 wafers and press down gently.
    Swirl top of each sandwich with chocolate.
    Serve immediately or wrap and freeze until ready to serve.
    You may substitute any ice cream or frozen yogurt flavors.
    You may also use any flavor wafer.
