Chicken And Sausage Jambalaya - cooking recipe

Ingredients
    1 small fryer
    1 celery stalk with leaves
    1 onion, halved
    1 garlic clove
    2 c. long grain rice
    1 lb. think-link smoked sausage, sliced into 1/2-inch pieces
    1 lb. ham, cubed
    1/2 stick butter
    1 c. chopped yellow onion
    3/4 c. chopped green pepper
    1/4 c. chopped parsley
    1 (6 oz.) can tomato paste
    1 large bay leaf
    1/4 tsp. thyme
    2 tsp. salt
    1/2 tsp. pepper
    1/4 tsp. Tabasco sauce
Preparation
    In a large pot, cover chicken with water; add celery, halved onion and garlic clove and boil until done.
    Reserve chicken stock.
    Remove meat from bones.
    Cook rice, using 5 cups of stock, until all liquid is absorbed, about 25 minutes.
