Eggplant Casserole - cooking recipe
Ingredients

2 c. diced, cooked eggplant, drained
6 Tbsp. margarine
1 c. cracker crumbs
1 c. grated cheese
1 c. milk
2 eggs, beaten
1/2 tsp. salt
1/4 tsp. black pepper
1 Tbsp. chopped onion
Preparation

Mix in order given.
Pour into greased casserole dish.
Bake at 350\u00b0 until the center rises.
Bake for 30 to 40 minutes.
