Charles' Favorite Potato Peelings - cooking recipe

Ingredients
    6 large potatoes, washed
    1/2 to 3/4 c. meal
    salt and pepper to taste
    1/2 c. cooking oil
Preparation
    Heavy peel (not thin) your potatoes and cover completely in hot water and soak for 10 minutes.
    Wash 3 times; if peelings are still very dark, scrape off with a sharp knife.
    Cut peelings into 3 to 4-inch pieces and mix in large bowl with meal, salt and pepper.
