Vegetarian Black Beans - cooking recipe

Ingredients
    1 Tbsp. oil
    1 small onion, finely chopped (about 1/2 c.)
    1/2 c. finely chopped green bell pepper
    1 medium size rib celery, finely chopped (about 1/2 c.)
    3 small scallions, chopped (about 3 Tbsp.)
    4 cloves garlic, crushed
    3 Tbsp. tomato paste
    3 (15 oz.) cans black beans, rinsed and drained
    1 (13 oz.) can chicken broth
    1 bay leaf
    1/2 tsp. dried oregano
    1/2 tsp. dried marjoram
    1/2 tsp. dried thyme
    1/2 tsp. dried basil leaves
    1/2 tsp. ground cumin
    1/2 tsp. paprika
    1/2 tsp. salt
    1/2 tsp. ground red pepper
    1/2 tsp. ground black pepper
Preparation
    In 3-quart saucepan over medium heat, heat oil; add onoin, green pepper, celery, scallions and garlic.
    Cook about 4 minutes, stirring occasionally until vegetables are softened.
    Add tomato paste; cook and stir 2 minutes.
    Add beans, broth, herbs and seasonings; bring to boil.
    Reduce heat to low, simmer, uncovered, 30 minutes until somewhat thickened.
    Remove bay leaf before serving.
    Makes about 4 cups.
