Nona'S Rice Cheese Pie - cooking recipe

Ingredients
    1 (15 oz.) container Ricotta cheese
    1 1/2 c. sugar
    2/3 c. raw rice
    2 1/4 c. scalded milk
    4 eggs
    1 Tbsp. vanilla
    1/2 c. plumped raisins
    2 uncooked 9-inch pie crusts
Preparation
    Scald milk and stir in rice.
    Add salt to taste and let cook until tender but firm and milk is absorbed.
    Let cool.
    Turn Ricotta into a bowl.
    Add sugar and beat until smooth.
    Add eggs one at a time, beating well after each addition.
    Add raisins (optional) and flavoring and blend well.
    Fold in cooked rice.
