Refritos-Refried Beans - cooking recipe

Ingredients
    **Begin to soak the beans at least 3 hours before you need them
    2 c. raw pinto beans
    1 1/2 tsp. salt
    1 1/2 c. chopped onion
    3 cloves crushed garlic
    1/2 c. minced green pepper
    2 tsp. ground cumin
    1/4 tsp. black pepper
    3 Tbsp. olive oil or butter
    1/4 tsp. coriander (optional)
    grated Cheddar cheese (optional)
Preparation
    Cover the pintos with water and soak 1 1/2 hours or more. Cover with more water and cook, partially-covered, until well done, usually 1 1/2 to 2 hours.
    Make sure you check their water level periodically while they cook.
    When they are soft, drain off excess water and mash well.
    Heat butter or olive oil in skillet. Add onions, garlic, cumin and 1/2 tsp. salt.
    Cook over low heat until onions are translucent.
    Add green pepper, cover and simmer 5 to 8 minutes.
    Add sauteed vegetables to the beans, along with 1 teaspoon salt and black pepper.
    Mix well.
    Add one cup grated cheese.
